Barley is an important food and fodder crop whose grains are used to make cereals, flour, feed livestock, in medicine and cosmetics, and as a raw material for the brewing industry. Barley grains contain 13% protein, 6% carbohydrates, 5.5% fiber, and 2.1% fat. Barley protein is more valuable than wheat protein, especially in terms of the amino acid lysine.
